What if I don’t have freeze-dried strawberries?
If you don’t have freeze-dried strawberries, you can also use this recipe:

• 20 Golden Oreos
• 3.4 oz box strawberry Jello powder
• 4 tablespoons butter, melted

Roughly crush Golden Oreos and pour into a bowl. Mix in strawberry Jell-O powder and melted butter. Stir well. Pour onto a plate and spread into a single layer.

Strawberry Crunch Ice Cream Cookie Sandwiches

These Strawberry Crunch Ice Cream Cookie Sandwiches combine soft cookies, strawberry ice cream, and a crunchy layer of crushed Golden Oreos and freeze-dried strawberries for a playful twist on the nostalgic ice cream truck classic. So simple to make, you’ll want to keep a stash in your freezer all summer long.

Ingredients

For the Strawberry Crunch:

Toggle ingredient group

• 20 Golden Oreos
• 1 ounce bag freeze-dried strawberries

For the Sandwich Cookies:

Toggle ingredient group

• 16 soft cookies (homemade or store-bought — sugar or vanilla work best)
• 2 cups strawberry crunch ice cream (or strawberry ice cream)

Instructions

1. Make the strawberry crunch: Place the Golden Oreos and freeze-dried strawberries in a ziplock bag.
2. Use a rolling pin to roughly crush into small crumbs.
3. Pour onto a plate and spread into an even layer.
4. Build the ice cream sandwiches: Place a generous scoop of strawberry ice cream on the flat side of half the cookies.
5. Top with another cookie and press gently to sandwich.
6. Roll in strawberry crunch: Roll the edges of each sandwich in the strawberry crunch mixture to coat the ice cream completely.
7. Freeze: Place sandwiches on a tray and freeze for at least 1 hour or until firm.
