I remember ladies at our church and my aunt making haystacks years ago around the holidays but I don’t think they ever made them green with sprinkles!
Haystack Candy isn’t a new new dessert but it is one that always seems to have new flavors and versions of the classic treating popping up around the holidays and I’m excited to share this one with y’all!
I love adding these candies to cookie trays around the holidays and making them with my son. They’re super easy to make and he loves adding the sprinkles to them.

How to make Christmas Haystacks:
- MELT
Melt white chocolate bark in a microwave-safe bowl in 30-second intervals until melted.
- COLOR
When bark is melted, add food coloring until desired color is reached. Makes sure you’re using OIL BASED food coloring when coloring chocolate.
- STIR
Stir in chow mein noodles.
- Mix Chocolate
Mix to coat noodles
- SCOOP AND PILE
Place spoonfuls on a baking sheet lined with parchment paper.
- SPRINKLE
Add sprinkles while chocolate is wet.
- CHILL
Chill for about 10 minutes or let sit at room temperature for about 30 minutes for chocolate to harden before serving.

Frequently Asked Questions
You sure can! I use to always use colored candy melts for candies like this but then I found that it was a lot less expensive to use white chocolate bark and oil based food colorings.
If you use a regular liquid food coloring (or even a gel) that is water based you’ll risk seizing the chocolate. Which means the chocolate will get super hard and lumpy. That isn’t what you want for these treats.

Instructions
Melt white chocolate bark in a microwave-safe bowl in 30-second intervals until melted.
