What is Buffalo Sauce?
Buffalo Sauce is basically, hot sauce and butter that has been simmered/mixed together. You can add other things to buffalo sauce but my favorite homemade buffalo recipe contains only 2 ingredients.
However, if I’m not making my own buffalo sauce, I really love Sweet Baby Rays Buffalo Sauce for this recipe.
Which chicken parts to use for Easy Shredded Buffalo Chicken?
For this Easy Shredded Buffalo Chicken recipe, I used boneless skinless chicken thighs.
You can use chicken breasts for this recipe but you will need to adjust the cooking time and I would suggest cutting and flattening the chicken breast before cooking.

How to make Easy Shredded Buffalo Chicken:

We’re going to be cooking these chicken thighs in the skillet for this recipe. Lay them out in a single layer.

Pour buffalo sauce all over the chicken and toss it coat everything.

This will only take about 30 minutes to cook and I like to stir it around the 15 minute mark.

Once the chicken is cooked, shred it up.

Place shredded chicken back into sauce and stir.

*chicken needs to reach an internal temperature of 165F to be considered safe to eat.

You sure can! You can use your own favorite buffalo sauce recipe or you can use this homemade buffalo sauce that we love.
Yep! It will take longer but you can indeed make this shredded chicken in the crockpot. Place the chicken and sauce in a slow cooker. Cook on LOW for 6-8 hours or on HIGH for 4 hours. If I were going to cook this chicken in the crockpot I would add two bottles of sauce just to make sure it doesn’t dry out while cooking.
You can store this shredded buffalo chicken in an air tight container (or air tight containers) for about 4 days in the fridge.

Ingredients
- 8 boneless, skinless chicken thighs
- 16 ounces Sweet Baby Rays Buffalo Wing Sauce
- 16 Kings Hawaiian rolls
Instructions
- Lay chicken thighs into a single layer in a large skillet.
- Pour buffalo sauce over chicken. Use a spoon or spatula to spread sauce over chicken and toss chicken around to make sure everything is covered.
- Set heat to low-medium heat.
- Place top on skillet and cook for 30 minutes, stirring at the 15 minute mark.
- Once chicken is cooked*, remove from pan and shred.
- Place shredded chicken back into sauce and stir.
- Serve with sides or on rolls as sliders.
