This is such an easy dinner recipe that is perfect for weekdays or weekends. I love that this is just kind of a dump, mix and bake type of recipe with simple ingredients, fresh herbs and lots of wonderful flavor.

This recipe is super no fuss because we’re using canned peas and carrots. You could also add canned cubed potatoes as well!

Why are we using canned peas and carrots?
You can use frozen but we like the canned peas and carrots because they’re softer in texture for the kiddos and it’s easy to have the cans of carrots and peas on hand in the pantry.
How to make Rosemary Chicken with Peas and Carrots

Preheat the oven 425F.

In a 9×13 pan mix together, the carrots, peas, chopped garlic, olive oil and salt.
Add chicken. Mix it all together.
Yes! Mix it all! -
Spread flat in the ban and make sure all chicken is on top.
Add sprigs of rosemary. -
Cover with foil and bake 1 hour.
Remove foil.
Flip Chicken and bake 20 minutes. -
Flip chicken again and bake more minutes.
Serve as is or over rice.

- 2 (14.5 each) cans peas and carrots, with juice
- 3 cloves garlic, peeled and chopped
- 2 tablespoons olive oil
- 1/2 tablespoon salt
- 6 chicken drumsticks with skin or 6 bone-in chicken thighs with skin
- 2 sprigs fresh rosemary
- 4 cups rice, cooked (instant, microwaved, any kind)
Instructions
Preheat the oven 425F.
