Frankenstein is one of those Monsters that we love and these easy Frankenstein Cupcakes are a great way to celebrate him.

QUICK GLANCE AT INGREDIENTS FOR Frankenstein Cupcakes:
CUPCAKES:
- chocolate cake mix
- water
- vegetable oil
- eggs
FROSTING:
- shortening
- butter, softened
- powdered sugar
- vanilla extract
- water
- green food coloring
FRANKENSTEIN:
- green airheads
- Chocolate Almond Bark or black melting chocolate
- small candy eyes

How to make these easy Frankenstein Cupcakes:
- Make Cupcakes
Make the cupcakes with the boxed cake mix recipe below.
- Make the Frosting
Use the recipe below to make the green frosting
- Making Frankenstein:
Melt chocolate according to package directions.
Unwrap the green airheads.
Take one airhead and fold it in half.
Dip the top folded part into the melted chocolate for the hair.
Use a toothpick to draw little hair spikes.
Press candy eyes into the airhead.
Use a toothpick and the melted chocolate to draw on the mouth, nose and stitches for Frankenstein.
Set aside for about 5 minutes for chocolate to harden. - To decorate:
Filling a piping bag, fitted with a large star tip, with the green frosting and pipe a swirl onto the center of the cupcake.
Before serving, add candy Frankenstein to the cupcakes. - NOTES
After a bit the candy Frankenstein will start to fold over because airheads are soft. I would add the candy Frankenstein right before serving.

Frankenstein Cupcakes

Frankenstein Cupcakes
These easy Frankenstein Cupcakes are made up of chocolate cupcakes, green frosting and Frankenstein monsters made out of green airhead candy!
Ingredients
Cupcakes:
- 1 box chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 eggs
Frosting:
- 1 cup shortening
- 1 cup butter, softened
- 2 pound bag powdered sugar
- 2 teaspoons vanilla extract
- 1/2 cup water
- green food coloring
Frankenstein:
- 24 green airheads
- Chocolate Almond Bark or black melting chocolate
- 48 small candy eyes
Instructions
Pre-heat oven to 325F.
Combine cake mix, 1 cup water, 3 eggs and vegetable oil in a large bowl.
Whisk together until smooth.
Line a muffin/cupcake tin with liners.
Fill each cupcake liner about 1/2 way full.
Bake for 20 minutes or until done. Cool Completely.
Making Frankenstein:
Melt chocolate according to package directions.
Unwrap the green airheads.

Making Frosting:
Add butter and shortening to bowl of mixer. Beat together until smooth.
Add green food coloring.
Mix in vanilla and powdered sugar until combined and smooth.
Add 1/4 cup water and whip on high for 3-5 minutes until fluffy. Add more water 1 tablespoon at a time if needed.
To decorate:
Filling a piping bag, fitted with a large star tip, with the green frosting and pipe a swirl onto the center of the cupcake.
Before serving, add candy Frankensteins to the cupcakes.
