Harry Potter received his Hogwarts letter and you can too! Well, you can have the caramel apple pie version of his letter! These Harry Potter Letter Caramel Apple Pies hand pies are made to look like Harry’s Hogwarts letter, complete with an edible Hogwarts candy “wax seal”.

It has a been a while since Harry Potter first came into our world of muggles but he and his story have captivated hearts since he received his letter to the magical world of Hogwarts.
I wanted to create my own version of the Harry Potter letter but wanted to make it edible!
So we’ve got a semihomemade caramel pie shaped like an envelope and it’s “sealed” with its very own edible Hogwarts seal!
Ingredients For Harry Potter Letter Caramel Apple Pies:
- Premade Refrigerated Pie Crusts
- Apple Pie Filling
- Apple Pie Seasoning
- Caramel Sauce
- Red Chocolate Candy Melts
You’ll also need a Hogwarts Retro Wax Seal Stamp

Which Brands Did I Use These Harry Potter Letter Caramel Apple Pies?
Sometimes when it comes to Semihomemade recipe that use packaged foods to create meals, the brands of items can make or break a dish. I don’t think this ALWAYS happens but I do know that not all packaged items are created equally.
Premade Refrigerated Pie Crusts – Pillsbury Premade Refrigerated Pie Crusts
Apple Pie Filling – Lucky Leaf Fruit Filling, Premium, Apple
Apple Pie Seasoning – I used McCormick
Caramel Sauce– Ghirardelli Premium Caramel Sauce
Red Candy Melts – Make ‘N Mold Candy Wafers- Vanilla, Red (found at Hobby Lobby)
You’ll also need a Hogwarts Retro Wax Seal Stamp – I bought mine on Amazon

How To Make Harry Potter Letter Caramel Apple Pies:
- To make candy “wax seals”:

Place wax seal stamp into freezer for 15 minutes.

Melt red candy melt according to package directions.

Lay out a piece of parchment paper

Spoon a small circle of melted candy melts onto wax paper.

Remove chilled wax seal and press into the center of melted chocolate. LEAVE IT THERE.

Remove once red chocolate candy has hardened.

Repeat until desired amount is made.
- To make the apple pies:
Preheat oven to 350F.
-
Thaw pie dough according to package directions and roll out onto a flat surface.

Cut out 2 rectangles that are about 3×5 inches-ish.

Re-roll dough and continue with that dough and the second roll in the box until all rectangles have been cut out.

Lay 1/2 of the rectangles onto parchment paper.

Pour apple pie filling into a bowl, add caramel sauce and apple pie seasoning. Stir well and mash if apples are in large chunks.

Add 1 tablespoon apple pie filling to center of 1/2 of the rectangles.

Whisk the egg and water together in a small bowl to create and egg wash. Brush the edges of the rectangles with the apple pie filling.

Use the other rectangles to top the filling.

Use a fork and press around the edges to crimp the sides of the pie

Use the dough scrapes and make a few little strips.
-
Place them on the envelope to make it look like a sealed envelope.

Place 4 or five pies onto a prepared baking sheet.

Brush gently with a bit of egg wash.

Cut two vents in the center where the wax seal will go.

Bake for about 10 minutes, or until crust is golden/toasty.

Repeat with the remaining pies.

Let pies cool and then use a little bit us melted candy coating to “glue” candy seal to the envelope.
You can also add a special touch by sprinkling the pies with something like turbinado sugar before baking.

- 2 tablespoons caramel sauce
- 1/4 teaspoon apple pie seasoning
- 1 egg
- 1 tablespoon water
- 1 cup red chocolate candy melts
Instructions
