We love recipes that kids can help with and these Monster Cupcakes are perfect for kids to help make. I had a 4 year old and he loves adding the candy eyeballs to these cupcakes and he loves that they are green.
Now, we did make these Monster Eyeball Cupcakes green but you could also make them pink, purple, blue, orange, red or any color monster you want.
We also made these with chocolate cake mix. However, if you’re looking for a homemade version, this chocolate cake recipe is great. Unfrosted cupcakes from a local bakery would also make these super easy to make.
What makes these Cupcakes, “Monster Eyeball Cupcakes”:
We’re starting with a Chocolate cupcake base for these Halloween Cupcakes but you could also use white cupcakes or red velvet cupcakes for these. Then these Monster cupcakes are topped with a giant swirl of green cupcake frosting and dotted with candy eyes! I don’t know about you, but anything with 10 eyes is a monster in my book!
You could also change these up a little bit and decorate these with giant candy eyes instead.

QUICK GLANCE AT INGREDIENTS FOR Monster Eyeball Cupcakes:
Cupcake:
- chocolate cake mix
- water
- vegetable oil
- eggs
Cupcake Frosting:
- shortening
- unsalted butter, room temp
- powdered sugar (aka icing sugar)
- vanilla extract
- water
- green food coloring
- mini candy eyes

How to make these easy Monster Eyeball Cupcakes:
- Make chocolate cupcakes
Make the cupcakes with the boxed cake mix recipe below.
Pop them onto a wire rack to cool. Make sure they are 100% cool before frosting. - Make green frostings
Use the recipe below to make the green frosting. You can also use canned frosting but the cupcake frosting recipe below is super easy to make and it is a wonderful shorting buttercream frosting. It is also a great piping and the frosting stays put when you add it to the cupcakes.
When making it green, use drop of the green gel food coloring or maybe a few drops at a time. Then mix and see if it is the color you want for your cupcakes. - Time to Decorate!
Filling a piping bag or pastry bag, fitted with a large star tip, with the green frosting and pipe a swirl onto the cupcake.
I find that it is helpful to get the tall swirl for the cupcakes if you pipe frosting dots in the center of the cupcake and then swirl frosting around them for the tops of the cupcakes. -

More Halloween Recipes:
I do bake these Monster Cupcakes in cupcake wrappers / paper liners but you don’t have to if you aren’t a fan of them. Just make sure to spray the cupcake pan well so that they cupcakes don’t stick.
Of course not! You can make these Monster Eyeball Cupcakes any color you want. It would also be neat to do a combo. If you want to make a red or pink monster, I would suggest that you use a no taste red food coloring because normal red food coloring can have a bitter taste.
Yes! I would say that they are best made the day of but you can make the cupcakes the day ahead of time and keep them in an airtight container for up to 24-28 hours and then decorate them the day you’re serving them (or the night before)
I like to use Mini Candy Eyeballs or Small Candy Eyeballs for these cupcakes instead of the huge candy eyes. I have found them online and at stores like Walmart, Target (during Halloween), Michaels’ and Hobby Lobby.
I used gel food coloring for this particular recipe but you can also use liquid food coloring. Green food coloring or neon green food coloring will work.
I used a large star tip for these cupcakes. The large tip makes it easy to make beautiful frosting swirls.

Monster Eyeball Cupcakes
Monster Eyeball Cupcakes are made with a rich chocolate cupcakes and topped with sweet green frosting and candy eyeballs. Easy to make and simple for kids to help with!
Ingredients
CUPCAKES:
- 1 box chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 eggs
FROSTING:
- 1 cup shortening
- 1 cup butter, softened
- 2 pound bag powdered sugar
- 2 teaspoons vanilla extract
- 1/2 cup water
- green food coloring
- small candy eyes
Instructions
Pre-heat oven to 325F.
Combine cake mix, 1 cup water, 3 eggs and vegetable oil in a large bowl.
Whisk together until smooth.
Line a muffin/cupcake tin with liners.
Fill each cupcake liner about 1/2 way full.
Bake for 20 minutes or until done. Cool Completely.
MAKING FROSTING:
Add butter and shortening to bowl of mixer. Beat together until smooth.
Add green food coloring.
Mix in vanilla and powdered sugar until combined and smooth.
Add 1/4 cup water and whip on high for 3-5 minutes until fluffy. Add more water 1 tablespoon at a time if needed.
To decorate:
Filling a piping bag, fitted with a large star tip, with the green frosting and pipe a swirl onto the cupcake.
Add candy eyes to cupcakes.
